Hello, we are a drinks retailer and are currently trialling whether Odoo is the right tool for us.

Our workflow is structured in such a way that we have predefined delivery tours for certain regions in our country. For example, region A is delivered on Monday, region B on Tuesday and so on.

We are trying to find out how we could implement this with Odoo.

When a customer is created, it is already clear, based on the delivery address, when he will be delivered. Let's say customer X lives in region B, so he will be delivered on Tuesdays. This should already be stored in the contact, then this delivery route should also be displayed in the sales order with the option to overwrite for special cases. Subsequently, all orders for a delivery day should first land in our planning department, where the best delivery route for the day is then planned, which also results in the order of picking, i.e. only then should the orders land in the warehouse in the correct order for picking.

Who knows how something like this could best be implemented? Thank you very much for taking the time to write this post.

Odoo have what they call Dispatch management. Function to plan distribution routes from deliveries.

But it is not fully what you need, as you cannot define a route on the customer and set related delivery date on the sales order.   But it give you functions to group pickings into routes. 

I would have asked an Odoo partner if they can develop on top of this.  The logic you need is not very complex.
